Default Sweet Potato Fries

A great substitute for the regular old starchy fries and tastes great too!

Sweet Potato Fries

Ingredients

*Fresh Ground Pepper taste
* Sea Salt to taste
* 2 tablespoon(s) Canola or other oil.
* 2 large (about 1 1/2 pounds) sweet potatoes

Directions

1. Prepare the sweet potatoes: Preheat oven to 450 degrees F. Peel potatoes, cut each in half lengthwise, and cut each half into 6 wedges (3/8 to 1/2" thick). In a large bowl, combine the cut potatoes, oil, sea salt and pepper. Toss until potatoes are evenly coated.

2. Bake the fries: On a baking sheet, arrange potatoes in a single layer and place on the middle shelf of the oven. Bake until edges are crisp and potatoes are cooked through -- about 15 minutes. Serve immediately.


They taste great plain but are also good with seasoning salt, ranch dressing or my favorite "Buffalo Blue Cheese Dip"**.


Buffalo Blue Cheese Dip

1/4 Cup of your favorite Blue Cheese Dressing
1 Tablespoon of Franks Red Hot Sauce

Mix together and serve that's it.

I like to make smoothies - frozen berries, nonfat yogurt, skim milk, and soy protein powder.

Are you looking more for snacks or meals?

Default foods that I don't throw me off

I take novolog and carb count, so I can't eat anything over about 4 carbs without taking insulin.

So between meals, a handful of almonds, a slice or two of low fat cheese, 1 piece of sugar free russel stovers, a slice or two of lunch meat, salad, sugar free popsicles

It might not seam like much but a tiny bit of food, really makes it easier for me to wait until "snack time" or food time when I count all the carbs and take the right amount of insulin.

favorite snacks when taking insulin-- apples and peanut butter, wheat thins and tuna...

I'm a real picky eater, my favorite vegetables were potatoes... man I miss them.

Smile more snack items

what about greek yogurt with strawberries, the loaded protein of the greek yogurt should balance off the fruit and keep you full-best brand 2% Fage
also try avocado-healthy fat that should tide you over

and my favorite Pure Protein bars- they have 20 grams of protein and end up under 1 carb serving- again the loaded protein should balance off the carbs, my favorite flavor is the chewy chocolate chip, but the fudge one or peanut butter ones are also good

hard boiled egg

About the sweet potato fries, if you use a ziploc bag you don't have an oily bowl to clean.
