Default Eating

Hello everyone! I am a 19 year old male and I was just diagnosed with T1 about a month ago. It was really strange because I have been an athlete all my life and always remain in good shape. One of the problems I have been running into is very low sugars either in the morning or I the middle of the night. Since I am new to this I kinda freak out and end up eating waaaay too much when my sugars get low. I am 5 foot 7 and about 190 lbs. how much should I eat/drink in order to get my loos sugars to a good level? Also my dietician recommended I eat 60-75 grams of carbs per meal. That seems like a lot to me 0_0. Is that correct or should I cut back some? Any feedback would be really appreciated!
