Great recipe for glucofriendly curry
Hey Guys!
I just want to share one of my latest food experiences. It's a simple asian vegie dish that just doesn't move my glucose lvls. At worst it required 1-2 units of insulin, and at best I just walked it of on my way downtown. Better yet I have experienced very stable and predictable ups and downs after eating this for lunch. For whose who know me, you know I'm not a vegetarian, and that I really enjoy both cooking and eating food. I am really picky, but I do like trying new things out, and this is my latest recipe to date. I have a few other ones written down that I will try to post later. Obviously I'm european so IŽll leave translating dl to cups up to you and google calculator. Vegie lentin curry: two servings 1 dl lentins, (green yellow or red) 0,2 dl sesame seeds Some canola oil 1/2 dl rice 1/4 big onion 1 unripe/greenish banana 1 clove garlic (optional) 1 cl spicy yellow curry powder Zest from 1/2 lemon Some lemon juice 1/2 cl dl thai green curry 1 cl Fish sauce / white soy sauce 8-12 rasins 4 dl Water Start one day prior by putting the lentins and sesame seeds in water over night. The next day pour them through a sieve and carefully wash them off. Start with a fresh frying pan. Put the stove on medium heat and pour some canola oil in it. When the oil is heated up put heavily choped onions, garlic, green curry, yellow curry powder, lemon juice and fish sause in the pan. Stir it all to one mix while sizzleing. When all stirred together, add raw rice and the lentin/sesame mix. Slice the banana into thick coins and stick it to the mix together with rasins. After letting the mix settle under continuous stirring and without burning, ad 1/4 of the water. Continue stirring. Efter letting the water boil down to a thicker texture, add another 1/4 of water. Continue doing this until either you are out of water, or the curry has been boiling for 20 mins. When some water still remains, turn the heat on the stove off, and let it settle for 4-10 mins. If you think leaving it on the hot stove will risk burining the food, move it to one ot the cold areas. Serve with a side sallad, a glass of water and a fire extinguisher by your side
