Iknow it seems overwhelming, but I am Hispanic and I now thrive on Asian food as a diabetic. There is so much good FOOD in your arsenal and you can have rice, so long as you count it. My diabetic nutritionist formulated a simple diet for me to follow carbs and calories by servings. 1/2 cup of rice is not much, but if you mix in kimchee and soy noodles, dude its a feast. Your doc can set you up with a special Meeting with a diabetic counselor or nutritionist and its covered by most all insurance now as its preventative for.them to do. Anyway, you can trick the veggies out by learning to cook insane things like mashed cauliflauer, spaghetti eggplants, seared braised zuchinni and toss on the lean meat till you get used to it. Trust me MASHED UP.CAULIFLAUER and lowfat butter will fool even you that they are potatoes. You will se an immediate change. Also, if possible, walk a couple hours after supper its good don't 20 points for me. Don't test after you eat. Get used to testing before and the important one is upon waking.
If.you want some.motivation, I have been diabetic for too long and just got out of the hospital with kidney failure, dka and kidney stones. I am given another chance ....again. don't wait too long. friend!
