Your doctor certainly has you on a very restrictive vegan diet and I can understand the benefits to this diet. However, I would have hoped for a little more variety. There are only a few ways to prepare potatoes and carrots in a healthy manner. Can you atleast add onion to the mix? Butter to the potato? I suppose the butter is out, but the onion should be in.
The diet seems to be working for you and I wish you continued success and good luck with it.
