Low "carb" probably means low starch. I have cut out nearly all starch (breads grains potatoes pasta rice etc) you just have to increase the amount of veggies you have to balance it as your body does need the nutrients. The instant I touch starches my sugars skyrocket. (More so than sugary things like ice cream)
