Egg beaters?
I know you said you don't go for eggs. If it's the taste, this won't help.
My standard breakfast is an egg-beater omelet equivalent to 2 eggs. In it goes 1 oz of cheddar and a chopped up very thin slice of ham and about 3oz of mushrooms. I have an English muffin with peanut butter and 2 cups of coffee.
The eggbeaters take away most of the cholesterol and fat. The whole thing is less than 30g of carbs.
