Stress will definitely drive your blood glucose level up. Many people will tell you that, after fighting with high blood glucose levels for many years, starting insulin was the best thing that they could have done. Since you are already watching your food intake, I urge you to learn to count the carbs, if you are not already doing so. Setting up an appointment with an Endocrinologist and having him calculate your Insulin Sensitivity Factor (ISF) and your Insulin to Carb Ratio (ICR) would be very beneficial, as well. This will allow you to calculate your bolus insulin injection, in order to facilitate your control and management. Good luck, I wish you the best.
