Default just diagnosed with GD & struggling with carbs

Hi all. I was diagnosed with GD last Thursday. My levels were high enough to go straight to insulin. I generally eat a low carb / low GI diet & am really struggling to eat the required amount of carbs (3-4 serves of carb for breaky, lunch & dinner, 1-2 serves for snacks). i get how having carbs evenly spread out over the day can help but don't understand how basically doubling or tripling my carb intake & eating so much more food than i normally do is going to be of benefit when I already had high blood glucose levels on a lower carb diet. I felt like a stuffed pig after trying to eat everything I should yesterday & still didn't hit the targets at every meal. Can anyone shed some light?? Thanks.
