as long as you keep your dietary fat very low, juicing is totally fine and you shouldn't spike too much. it's when carbs combine with fat that I typically have issues with spiking - otherwise, the simple carbs are covered fully by rapid insulin as long as your ratios are good.
I love juicing and I love fruit. low carb is not healthy, your body needs carbs - not in the form of processed grains - but high carb, low fat diets are amazing, especially for athletes - you should check out Douglas Graham's book 80/10/10 - I never had so much control over my diabetes than when I followed this diet - 80% of your calories are from carbs, 10% from protein and 10% from fat - I was eating nearly DOUBLE the carbs, had a ton of energy, and my insulin actually DECREASED because of the very low fat.
