Try this for a low-carb alternative to hash brown potatoes. Get a jicama (it's a root vegetable about the size of a coconut) and peel off the tough outer skin. The flesh is white, crisp, and slightly sweet. Shred the meat of the jicama and blot with a paper towel to dry it. It can then be sautéed in a skillet with a tiny amount of oil or butter until browned on one side. Flip and brown the other side. Jicama will retain its crispiness even better than potatoes. My non-diabetic wife loved it!
Next, I live it Texas and there is a brand of flour tortillas named Mission. They have two sizes of carb-balanced tortillas. The little ones are only 6 grams of carbs (net) so you can make a couple of awesome egg, bacon and cheese breakfast tacos, a little salsa for a kick, and enjoy without guilt. Fewer carbs than two slices of whole wheat toast too. Don't want cheese or bacon in your taco? Try chopped sweet yellow peppers, or diced sun-dried tomatoes, or other veggie ingredient.
Last, be a little non-traditional and have a hot bowl of soup for breakfast. It will warm your innards and get you through the morning until lunch.
