Try to keep your blood sugar between 100-120 during the day and 70-99 fasting. Just remember that you are not eating much when you eat the peanut butter sandwich, as it is only 28 carbs. When low, I generally try to eat ~15 carbs, 1/2 peanut butter sandwich, and test 15 minutes later. This is called the
15-15 Rule. Try learning to count carbs, see Carb Counting 101, in the Type 2 Section, it will help you alot.
