getting ready to celebrate my 60th birthday, & I have only known I am diabetic for less than a month. Any great recipes for a cake I can have a slice of and not send my BS skyrocketing?

my 60th birthday present to myself, is type 2 DM. Just dx a month ago, after months of exhaustion. Rx & eating better are helping. I still hesitate momentarily b4 releasing the lancet!
