Why does the graph show low, average , and high when all of these are in the 200 range for me

Welcome to the forum! :)

Red = Highest reading of the day
Magenta (Purple) = Arithmatic average of all readings uploaded for the day
Blue = Lowest reading of the day

Your goal should be to keep the Magenta (Purple) inside the green horizontal boundary.
